American Wagyu

American Wagyu is a blend of Japanese wagyu with another breed, in our case Black Angus. This produces a cow with increase mass from the Angus profile, and superior marbling from the wagyu profile. We’ve been blending this way since 2022 and has quickly grown to be the most popular style. Full Wagyu is very rich, and sometimes too much for daily consumption. American Wagyu is a great blend of marbling and richness that is easy to consume. The flavor profile tends to lean a bit more nutty and umami compared to a traditional Angus, but is still a mild and sometimes imperceptible difference.
